Fresh Green Peas Bruschetta
A quick and very delicious recipe of bruschetta that is perfect to be shared in the family or with friends especially during hot summer days. It has a fresh Mediterranean taste and aroma in my opinion.
- 150 g of organic green peas
- 250 g of organic ricotta or fresh goat cheese
- 1 organic lemon
- Organic oregano
- Organic olive oil
We prepare the peas in the same way I have shared in the previous recipe: we boil the fresh green peas only 30 seconds. We transfer them to very cold water for several seconds and then we drain the water.
We grate finely rind of half a lemon and squeeze the lemon juice as well into the green peas. We add some salt and a little bit of olive oil.
We mix the paste with ricotta cheese or fresh goat cheese. It should be a soft creamy cheese. Add more lemon juice if you want to have a creamier paste. Ricotta does not have a specific taste and is ideal as a base to experiment mixture of different herbs depending on your preferences.
The paste is ready. We just need to put it on the bread. We buy from our bakery bread with nuts and raisin. It will bring an additional pleasant taste. You can also use toasts.
We top with the fresh green peas, boiled of course, we grate on top finely lemon rind and season with olive oil and oregano.
